What I Used:
- 2 lbs large carrots
- 2 Tbsp butter
- 1/3 cup apricot preserves
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 tsp grated orange peel
- 2 tsp lemon juice
- Wash and peel carrots
- Cut carrots on the diagonal
- Add 1 1/2 cups water, cover, steam for 20 minutes
(1) Melt butter and stir in preserves until fully combined.
(2) Add nutmeg, salt, orange peel, and lemon juice. Stir to combine.
(3) Toss steamed carrots with apricot mixture until thoroughly coated.
(4) Serve immediately.
