Apple-Spinach Fruit Leather

What I Used:

(1)  Process applesauce and fresh spinach in blender or food processor until smooth.  You may need to add some water to get the pieces moving, but be careful not to add too much because it will significantly add to your drying time.

(2)  Preheat oven to 170 degrees and line 11 x 17 baking sheet with parchment paper.

(3)  Spread apple-spinach mixture on baking sheet, making as smooth as possible.  I like using an icing smoother for this purpose and allow the edges to be slightly thicker.  I also try to avoid the edges of the parchment paper so I have some room to maneuver the leather after it’s baked.

(4)  Place in oven for 3-5 hours (may not be completely done, but cut off “done” ends and let rest bake, checking every 30 minutes to prevent over cooking).  Fruit leather is done when it is dry to the touch but still pliable.  If it starts to crack, brush a small amount of water on top of the leather, and it will become pliable again.apple_spinach_leather_done

(5)  Cut into strips with kitchen shears, roll, and store in a plastic bag or airtight container.
